I am putting together a tropical, summertime pie right now for three reasons:
1. I'm hoping it encourages the sun to grace this gray State.
2. As an homage to the island where my husband-to-be proposed and the Island that will see "The End" this Sunday night (and to all my fellow Losties out there).
3. Because it's freaking delicious, and I love food porn.
So here's the deal -- It's Kalua pig, slow cooked with tender pieces of sweet coconut and drizzled with an amazing mango barbecue sauce. I also have a bit of a spicy mango sorbet to top these pies like a sunset melting into a golden beach of hot, flaky crust.... This is the kind of pie you take a snapshot of and Scotch tape to your cubicle wall. Put on your pork pie hats and join me in paradise...
