Hungry Hiker? From Dust to Dinner, This Pie is a Winner!

As a child I was fascinated with freeze dried food. I was a weird kid. Anyway, over the years I have picked up my share of camper's food packets, astronaut ice cream and dehydrated beer powder (yes, it exists!). This week at New Seasons I picked up a bag of chicken pot pie -- how could I NOT?!?

It was one of the best dust-to-dinner meals I've had the pleasure of eating while pretending to be lost in the woods (I am a weird adult too).

If you are a hiker, camper, survivalist, don't own a refrigerator or you are just putting together your survival box for the 'End Times', check out Hungry Hikers Chicken Pot Pie meal. It is a lightweight, dehydrated meal that only requires some boiling water to make a convenient bag-o-pie (okay, it's really not a pie, so much as a dinner made up of the flavors of the innards of a chicken pie... but, you'll get the picture):

The potatoes are rehydrated to reveal that they are actually garlic mashed potatoes! The garlic flavor isn't too strong though, once that herbed chicken gravy hits it, it smells pretty freaking good.

Pour that chicken on top with the veggies and gravy and you've got yourself a colorful meal loaded with protein (ok, it's also loaded with sodium and some MSG, but c'mon people, it's the End Times, we're surviving, this is the freaking wilderness! Would you rather have a balanced meal or keep picking up that hot dog you've been toting around in your cooler that looked a little green before you dropped it in the fire a couple times and pulled it out with a stick to eat it anyway?! Okay, that sounds kind of good to me too! Geez! But the Hungry Hiker packet is mucho classier so stop being so cheap!!!! Oh yeah, these aren't cheap @ $8.99, but they feed two and last for a darn long time -- GOOD DEAL). Remember, we are camping/hiking/surviving the apocalypse in this scenario...

This meal is super tasty! The sweet corn, peas, and carrots come back to life with ease. It makes me want to be friends with the ladies that created these little packages of heaven -- I have some great recipe ideas for them!

side note: I would have maybe eased up on the herbs and seasoning and given the Hiker a packet to season as they wish, but there is a convenience level they are trying to achieve, I get that...

So, head to New Seasons and pick up one of their many varieties of Hungry Hiker meals and build a fort under your dining room table to eat them in!

As many of you know, meat pies are amazing, versatile, and delicious. No one knows this better than those lucky enough to live in a magical place where meat pies are available in every convenience shop, each bakery, and around every corner. My New Zealand Correspondant, Nicole Andrews, has just sent me the fruits of her research on a variety of tasty meat pies! Read, drool, get inspired...

This is from the Arrowtown Bakery which is just outside of Queenstown (where I used to live the last few years). This is the Hot and Spicy pie, which basically is just a chicken pie with like a tobasco-ish flavor. I seriously love it though. It's simple and good. Kiwi pies are usually very simple.

This Mushroom Pie is also from Arrowtown Bakery. The tops always peel off on the kiwi pies for some reason. I think its so they can shove ketchup in it. That's a big Kiwi thing.

This is a store bought Potato top and mince pie (Like a shepherd's pie!)... This one is just a generic pie that you can get from a convenience store (like a lot of pies). Mince is ground meat, usually beef here.

Here's another mince pie (ground beef) with beef gravy and cheese, which has a layer of fake cheese on top. This is called "Cheese and mince."

Another Mince and Cheese pie. This one had real cheese in it...

Another store bought heat lamp pie. Not fancy at all, but this is a good brand. Pies here are like burritos in America. They are everywhere, everyone eats them, you can get them frozen, you can get them in a nice restaurant, and you can get them in convenience stores and gas stations. There are many varieties but usually the same old flavors are the favorites.

This is a case from a cafe in town. There are some seriously awesome pies in the cafes here. These pies are probably about $10 though, so I rarely get one. All the pies earlier in the email are more like $2.50 or $3.50.

Here is a Chicken Tikka Masala Pie. The brand is from a local Indian restaurant chain. Apparently Brad Pitt ate there once or something, but despite that rumored endorsement, the pie was not so good. I've had Thai yellow curry, chicken, and coconut pies in Queenstown before and all were really good. This one not so much, but its probably the brand...

There you have it, folks! The low down on pies down under! I think I may have just come up with a couple new recipes myself!

Tasty treats supplied by Meat a la Mode, Gorilla Meats, and other PMC members/students

I have always remained firm in my belief that meat is perfectly natural, nutritious, and delicious to eat. I love food, wild game especially, but I was not raised to hunt or fish. I was excited and intrigued by the pig slaughtering class offered by the Portland Meat Collective, and saw this course as essential education for me.

At a farm in Newberg, Oregon, Home Pig Slaughter 101 began in the pen. We were able to observe the hog enjoying it’s last moments snorting around some straw with the man who would butcher him. This pig had lived quite a charmed life for the last ten months. Noshing away on the scraps of a 5-star restaurant and finished on Oregon hazelnuts, this Red Waddle was fat and happy, and now his fate was sealed. The Farmers had attempted to sedate the pig with a little beer, but the hog wasn’t drinking – It was pretty early in the day...

The pig went very quickly. I barely had time to send my silent ‘thank you’ to the swine for his sacrifice when a quick shot with a handgun hit him right between the eyes, dropping him instantly. The class was then pragmatically instructed on how to quickly find and sever the animal’s aorta. The hog bled out, neon red in the mud, and then was swiftly strung up by his hind leg to be hosed off. A fascinating evisceration education followed. The second pig of the day was clearly stressed before the kill and I observed first-hand how that affected the meat and butchering process instantly.

Like a movie full of metaphor, the gravity of what I experienced didn’t fully hit me until after I left the theater. I drove home in a daze. I dreamed of the experience. I mourned those pigs. It startled me to feel fleeting rushes of sadness, exhilaration, nausea, guilt, and triumph... A more complete understanding of the circle of life and all that jazz. I definitely felt a little wimpy, even worried for having been so affected by something that I before considered a casual part of the natural food chain. Would I ever be able to eat meat again? (the answer to that came hours later when I unwrapped a tasty mortadella from Gorilla Meats) Yes!

I suppose I would have been more concerned for myself if I felt nothing. Levi, a PMC instructor, did a great job of showing the most swift, responsible, respectful and matter-of-fact farm slaughter I have ever seen or heard of.

This class changed the way I look at my career, my pets, and my meals. I have learned to be more appreciative than ever of the artisan skills of a Farmer and Butcher. I know for sure that my place is in the kitchen, not the slaughterhouse. I'd rather break it down, cut it up and cook it than kill it. I am even more convinced of the importance of how the animals we eat live and die. I still love me some bacon, but I am humbled to experience this magical meat with a new level of connectedness with The Mighty Pig.

My family shared a wonderful, comforting Chicken & Dumplings dinner. And it was lovingly enveloped in a flaky pie crust! The chicken was juicy and tender; the crust savory, with just a decadent hint of sweetness; the resilient dumplings were (surprise!) adorable little gnocchi. My mouth climaxed. Repeatedly.

I was wholly satisfied and glowing as I pushed my chair back from the table, but I couldn't stop thinking about which pie I would order next. Duck and Wild Rice? Lobster? Alligator? Mac and Cheese? I'm doing it again. Cheesesteak? Baked potato?!

The family size was enough for two four-person meals, and it was even better the second time around!

From the sinful taste experience to the impeccable presentation (the gold dusting on the top, the radish rose, the antlered-pie stencil); I was thoroughly impressed by every aspect of the meal(s).

Meat á la Mode will now be my go-to culinary surprise when I want to amaze my family and friends visiting Portland from around the country. Or when I don't feel like making dinner, which will likely begin to happen much more often... -J.T.

Delicious meat pies! Indeed a must have...

Kristina Krough has amazing talent! She has taken the traditional and classic pot pie to the next level! Kristina dares to experiment with exotic meats, a crispy layered crust, different shapes, and finishes her pies with a golden touch. Literally adds gold leafing! Talk about extraordinary!

I will say my favorite so far, is the rabbit and white wine. Yum in my tum! Then the sweet lobster heart shaped pies.

Next in line, I wish to try the duck and wild rice. Holy moly! This pie sounds savory! Can't wait to try it! -S. Johnson

We ordered a dozen Chicken Noodle mini-pies and a dozen Coconut Pulled Pork mini-pies with Spicy Mango Bbq Sauce for a BCS Championship game viewing party at our house this week. Rather than having them cooked ahead of time, we baked them ourselves at home.

The pies were a HUGE hit with the group of about 20 people. The Chicken Noodle was spicy and flavorful, and the Coconut Pulled Pork was saucey and delicious.

Meat a la Mode is THE PERFECT party food, especially for informal sports event gatherings. Hey, the Super Bowl is coming up in a few weeks... -Greg B.

I was at Greg's party and can confirm that those chicken noodle and pulled pork pies were totally grubbin'. There was plenty of food at that party, but people landed on the plates of pies and destroyed them in moments. Damn tasty! -Scott D.

I honestly can say that I could not have been happier with the Chicken Noodle Pie that I had from Meat á la Mode. The puff pastry lid was wonderfully golden and crisp, and the filling was to die for. Incredibly well-flavored with the most delicious chunks of white meat chicken, vegetables and noodles, My guests absolutely raved about this company's pies!! I will most definitely be using Meat á la Mode again for my next big social affair.

Last summer, during the sweltering heat wave, I went to the Farmers' Market on Salmon Street seeking a Sol Pop for relief. As these things often will, I got sidetracked when I saw that the final contestants from Pieopolis were sampling their wares...oh my! I forgot how hot it was & immediately got down to business. My first bite was a sample of White Wine Rabbit Pie from Kristina Baesler - the story behind this flavor was filled with topsy-turvy Alice In Wonderland imagery. I was smitten. I tried to locate her later, but to no avail! I dreamt of this pie - especially as it was burnished with real gold, mashed potato piping along the edges, and just filled with succulent meat & vegetables.

FINALLY thanks to another social networking site (you know who you are!), Kristina contacted me. This woman & I were just destined to meet! She makes pies and savory ice creams that are out of this world! We discussed whether or not Portland could really embrace her vision due to the large population of vegan & vegetarian diners. No need to worry! Portland also has a very large contingent of meat eaters...carnivore deluxe!

Last night Kristina delivered a White Wine Rabbit Pie to my door and I can tell you, the 3 Musk-A-Teers & I have been in a state of bliss ever since! In the very center of this amazing dish was the silhouette of a rabbit in gold - so very gorgeous! The filling is perfect in every bite, filled with meat, vegetables, and a sauce that compliments the meat in a velvety blanket. The crust is burnished to a golden glow and the piped mashed potatoes around the edges just make this bunny look like he/she is sporting a very frilly collar - that just happens to be delicious to eat as well as to ogle! I cannot be more pleased.

If you are entertaining or if you would like to sample some savory pies for your family, please give Meat a la Mode a call - there are several sizes available & lots of flavors from which to choose. Her blog is wonderful to read, as well. This is one of those Portland businesses that you can feel very good about supporting. I guarantee you will not be disappointed!

For the last couple of years I have been sharing my pies with a wider audience than just my family and friends, and it has been so incredibly rewarding. I've found many new friends and meat lovers while sharing my pies at farmers markets, parties, events, fundraisers, through blogging, and even home delivery! I've worked to provide a melange of meats in pie form -- from bunny to buffalo, chicken to chorizo, ham to haggis, Thanksgiving Dinner to a fabulous Dickensian Christmas -- How's your mind? Blown?!?

How's your appetite? Ready for something new and exciting?

So is Meat a la Mode.

There are three really big projects that Meat a la Mode is working on and we will share at least a couple of them very soon (cross your fingers with us on the third!). We have had an incredibly successful year and look forward to the crazy-busy holiday pie season as well as an amazing 2011 full of continued growth & changes!

So, basically Tony Bourdain reiterated my overall stance on food in general: Does it taste good? Well, then...Shut the eff up and eat.

Mouthbreather audience members aside, it was was a humorous anecdote to Mr. Bourdain's delicious show and highly entertaining books. I said hello and gave him a MALM t-shirt -- hopefully that was one of the less awkward items he received that evening (If I were him, I wouldn't be digging into the random food offerings creepily presented to him on stage, but this guy is quite adventurous...)

There is a really important fundraising event coming up this June 26th where you can contribute to a very good cause and sample Meat a la Mode's latest delicious, portable indulgence: Meat a la Mode's MiniMeat Cupcakes!

The 1st Annual Cancer Schmancer PDX is an all-ages fund raiser benefiting breast cancer survivor, Jayne Hollenbeck, with generous support from the good folks at Portland City Art (PCA) and The Blenderhead Project.

Festivities will include live music with the AMAZING 3 Leg Torso at 6pm, Lisa and Her Kin and Tater & Craig- - -plus the exotic-sounds of dj Drew Groove in between. Wowza!

Showing on the PCA gallery walls inside Olympic Mills, "NW Art HerStory" will feature some of the Pacific Northwest's most brilliant female artists! Check PCA's website for more information about the show.

Filling the space around the gallery you will find craft tables for kids of all ages and have an opportunity to indulge yourself in a massage in the north gallery.

There will also be cool door prizes and a FANTASTIC silent auction, full of great surprises for everyone!

I am putting together a tropical, summertime pie right now for three reasons:

1. I'm hoping it encourages the sun to grace this gray State.

2. As an homage to the island where my husband-to-be proposed and the Island that will see "The End" this Sunday night (and to all my fellow Losties out there).

3. Because it's freaking delicious, and I love food porn.

So here's the deal -- It's Kalua pig, slow cooked with tender pieces of sweet coconut and drizzled with an amazing mango barbecue sauce. I also have a bit of a spicy mango sorbet to top these pies like a sunset melting into a golden beach of hot, flaky crust.... This is the kind of pie you take a snapshot of and Scotch tape to your cubicle wall. Put on your pork pie hats and join me in paradise...

Slight delay in construction. Such is the nature of construction and all things related to plumbing, eh? The progress made this week in the name of a dream has been phenomenal. The kitchen is taking a bit longer than expected. The journey is long, but it's such an incredible learning process and I cannot thank my circle of carnivorous fans, friends, and supporters enough.

They will typically include beef sirloin, pork, chicken, turkey, and lamb. The cake is also dotted with sun-dried tomatoes and fresh basil, drizzled with a special spiced ketchup sauce, frosted with seasoned mashed potatoes and iced with with the message of your choice, in cheese. Thank you to all who came to have a taste of Meat á la Mode Pies this Halloween from noon to 4 p.m. in the Kenton neighborhood. The people of the Portland Halloween Bazaar, especially Jack and Jayne, created an amazing event for families all over Portland.

Hundreds of meaty morsels were devoured within minutes, and the satisfied sighs of the pie patrons could be heard throughout the evening...

I want to thank the creators of the Portland Halloween Bazaar for passing out a ton of my little mini meat pies to the masses -- That well-received pie was Pork Chop and Applesauce and would be fantastically accompanied by my Apple-Thyme-Pecan ice cream -- The savory ice cream partner to my Pork Chop Pie is a little taste of home-cooked heaven, even with the introduction of this crisp fall air... Bierocks Rock!

Seeing that I am of German heritage, I decided that it was time to develop a so-themed pie with beef, taters, cabbage and the like -- the results are predictably astounding, though this pie does have a far more rustic flavor than my usual delicacies. It is still in development, though ready for public taste-testing asap!

My next recipe is going to take a lot more tweaking than the Bierock (or Fleischpastete, or whatever the politically correct term is...) -- Haggis Pie, my friends... Haggis Pie. My genuine Scottish acquaintance, musician Aldo Cruickshank, has promised to send me haggis secrets so that I might add some authenticity to my recipe-in-progress, lord knows I could use more credibility...

I have just succeeded in making one of the most elusive of all Midwestern treats! I believe this shall join my pie menu -- I'll give you a hint: It's hot, it's golden, it's incredibly popular and sought after, and (to my knowledge) this dish cannot be found anywhere in Oregon!

Tomorrow the Eastbank Farmers Market plays host to Pietopia, the second pie contest in the last five days. The big difference between Pietopia and last Sunday’s Portland Pie-Off, however, is that the Pietopia pies come with one additional ingredient: symbolism. Contestants submitting pie recipes to Pietopia are also asked to submit a story that connects the pie and its ingredients to a life experience. The winners receive a one-of-a-kind art print inspired by their entries, and a chance to sample their pies at the Farmers Market.

At least one Pietopia winner is taking it as a chance to go further. Kristina Baesler, who won with her White (wine) Rabbit Pie, is hoping that her Pietopia win is a sign she will soon kick-ass in the Portland food scene with her savory pies and ice creams. On her new blog, Meat a la Mode, there is a good amount of space given to discussing her creations, which all sound quite tasty. It’s clear that she’s casting about for a place to land after a soul deadening office job, and I hope that someone gives her a space to apply her skills. Because I have to say, I want an Oxtail Pie with Dill Ice Cream… Right now.

You can taste Baesler’s creation tomorrow (along with pies from three other winners) between 3:30 pm and 6:30 pm at the Eastbank Farmers Market [SE 20th and Salmon].

“How crazy is life?! I’ve gone through the looking glass!”

White (wine) Rabbit Pie

Everything is a little upside down in my world. A little debt, a little regret, and a lot of wine. I should be baking pies all day instead of taking crap from people who are probably far worse at living life than I am. But, I followed a path that led down a rabbit hole of fake-smiles and endless passive-aggressive office banter...

So now I slap a grin on my face, raise my voice a couple octaves, and enter my office cubicle (represented via cubed potatoes) about 15 minutes late (I spend my mornings baking, one of the few things I have to keep the ol’ noodle slightly grounded in reality) every morning. I feel like I'm really late for a very important date with my true destiny. I continue each day on a seemingly endless journey to pay off my loans and begin my “real life” – outside of this freakish Wonderland. I feel bad for all my co-workers; mad as hatters and not helped in the least by the complete lack of passion I have for my job that leads to endless flakiness on my part – like so much puffy pastry.

The gold atop my White (wine) Rabbit Pie represents how good I make my life look from the outside. Shiny, polite and decadent on the surface, and deliciously politically incorrect on the in – I spend my day desperately wanting to scream what my pies say so naturally, “EAT ME.”

I'm ready for the next chapter!

So, discovering a long lost relative who wanted nothing more than to see me realize my dreams of making meat pies and savory ice creams would be terribly convenient right now -- Until that day comes, or until I devise a plan to pull it all together on my own -- I have many meat pie recipes just waiting in the wings for all to taste and dream of. For now, just a close few can sample my genius (as well as anyone who stops by the Eastbank Farmers Market for free samples of my White (wine) Rabbit Pie on Thursday from 3:30 p.m. to 7:00 p.m.). Special thanks to the super-nice/rad/fully knowledgeable peeps at C hop (the meat market within City Market/Pastaworks on NW 21st & Johnson) for helping me procure the bunny meat for this awesome event & giving me some always appreciated words of wisdom... I buy all my meat there if possible because it is the best, and yes, there is a difference... and yes, it is good to know your butcher... and yes, I kind of wish I was one.

This Thursday is the big Pietopia event! This was the first cooking contest I ever participated in. I decided that if I won, it would be a sign that I should keep on truckin' and serve my beautiful baby pies to the masses on a regular basis...

So, I was a Pietopia contest winner and will be receiving my totally awesome, soon-to-be-framed prize and serving FREE samples of my winning pie at the Eastbank Farmers Market from 3:30p to 7p! YAY!

In order to motivate myself to perfect the remaining recipes on my list, get started on my soon-to-be-published magazine and kick total ass this week, I printed up some delicious looking business cards. Come snag one -- and free pie this Thusday, August 20th!

I am making many varieties of tasty meat pies and savory ice creams... I love it! I just won the 2009 Portland Pietopia contest for my White (wine) Rabbit Pie... I should really do this for a living... Many of my pies are filled with meat accompanied by fresh veggies, cheese, gravy, rice or noodles -- and all are topped with a little bit of decadence, like edible 24k gold, fresh or candied flowers, or delicious savory ice cream in a number of flavors that I am continuing to fine-tune daily :)
